Copper River Salmon is avaliable in May and I bought about 15 lbs at Costco for $6.99 a pound. We grilled and ate several sides. I recently purchased a Bradley Smoker to do cold smoking. I decided to smoke the rest, I followed the recipe and procedure on Salmon Universities website. I put them in the smoker at 10 pm and woke up at 4 am to check on them.
